Description
Bimber Distillery "Harmony of Eight" 8-Year-Old Single Malt London Whisky, Released at the end of 2024, this landmark bottle represents one of the very first age-statement whiskies from the London craft producer. Crafted from a meticulous marriage of ex-bourbon and Pedro Ximénez (PX) sherry casks.
Strictly limited to a small batch of 1,090 bottles worldwide, it's true to Bimber's signature style, it is non-chill filtered, naturally coloured, and produced using traditional floor-malted single-farm barley.
This marriage of the two distinct casks balances the vibrant, charred-oak, fruit-forward style of traditional bourbon maturation with the deeper, rich, and decadent red fruit qualities of sweet Spanish Pedro Ximénez sherry wood. Expect rich notes of ripe berries, tropical fruit salad, vanilla cream, nougat, and smooth oak spice.

About the Distillery:
Bimber is a Whisky distillery in London. 'Bimber' means moonshine in Polish. The founders of the distillery emigrated to London from Poland in 2003 to start their business. The first casks were filled in May 2016. Since 2019, the distillery has been bottling Whisky in small batches or from single casks. Among them are mainly Ex-Bourbon and Sherry casks but also fresh Virgin Oak casks.
